Based on an age-old Persian device for wicking away steam from the inside of the rice pot, this sturdy double-layered cloth soaks up condensation as grains cook, giving them a texture akin to Indian basmati rice. Just slip the Bonnet around the underside of any conventional size pot lid then cover and cook your grains as usual.
